I normally don’t like to meal prep fish/seafood but occasionally I will make an exception for shrimp. Shrimp tends to last in the fridge a little better than any other kind of fish. This recipe is very simple. There’s really no technique to it, just cook everything and throw it together. I filmed a video of how to make this one but I haven’t gotten around to editing it yet. Keep an eye out for it in the future ? EDIT: I’m writing this a couple hours after I posted and I realized I fat fingered the number of servings in the picture, it should say 5 servings, not 4

**Ingredients:**

– 1 pound large shrimp, peeled and deveined
– 12 ounces smoked sausage, sliced into rounds
– 2 tablespoons olive oil
– 1 small onion, diced
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 3 cloves garlic, minced
– 1 can (14.5 ounces) diced tomatoes
– 1 teaspoon Cajun seasoning
– 1/2 teaspoon dried thyme
– 1/2 teaspoon paprika
– Salt and black pepper to taste
– Cooked rice or crusty bread for serving
– Fresh parsley for garnish (optional)

**Instructions:**

1. **Prep the Shrimp and Sausage:**
– Pat the shrimp dry with paper towels and season with a pinch of salt and black pepper.
– Slice the smoked sausage into rounds. If you prefer a smokier flavor, you can briefly sear the sausage in a dry skillet until it’s lightly browned before starting the recipe.

2. **Sauté the Sausage and Veggies:**
– Heat the olive oil in a large skillet or pan over medium-high heat.
– Add the sliced sausage and sauté for 2-3 minutes until it starts to brown.
– Add the diced onion and bell peppers to the skillet and cook for another 3-4 minutes until the veggies are tender.

3. **Add Aromatics and Spices:**
– Stir in the minced garlic, Cajun seasoning, dried thyme, and paprika. Cook for another minute until the spices become fragrant.

4. **Tomatoes and Simmer:**
– Pour in the diced tomatoes (with their juices) and mix everything together.
– Reduce the heat to medium-low, cover the skillet, and let it simmer for about 10 minutes to allow the flavors to meld together.

5. **Cook the Shrimp:**
– Uncover the skillet and add the seasoned shrimp to the mixture.
– Cook the shrimp for 3-4 minutes, or until they turn pink and opaque, flipping them halfway through.

6. **Adjust Seasoning:**
– Taste the dish and adjust the seasoning with additional salt and pepper, if necessary.

7. **Serve:**
– Serve the Shrimp and Sausage Skillet hot over cooked rice or with some crusty bread to soak up the delicious sauce.
– Garnish with fresh parsley for a burst of color and flavor.

**Tips:**
