Plant based meal in under 10 mins ??? Heck yes! The easiest way to pack in a ton of veggies in a hurry ?? @eatbanza chickpea pasta + sautéed veggies + leftover brussel sprouts ? So easy but sooo satisfying!! I mixed the pasta in some olive oil, garlic, basil, and red pepper flakes ? I’m not a die hard pasta person but on a cold fall day give me alllll the warm pasta bowls ? Especially when they’re gf, grain free, and full of veggies ?? Wild Friday night planned over here working on things + cleaning/baking while Eli studies! Probably also a Target run because I’m feeling crazy ? Eli’s got a big test week coming up next week and after that we’re doing a stay cation for a few days ? So excited!! For now though, it’s cleaning and podcast listening ? Then added in sautéed spinach, tomatoes, and leftover Brussels (400F for 40 mins)
