Roasted veggies with grilled beef for the win ? Many of you ask me how I roast my veggies (and mainly eggplants), so I decided to cook this beautiful bowl and prepare step by step guide for you in my Instagram stories ?? It was fun and I hope you’re gonna like it ?? The bowl turned out so delicious and colorful. I love colorful plates because colorful food looks better, colorful food tastes better and colorful food makes it easier to stay on track and follow your current routine ?
What’s in my bowl: roasted potatoes, roasted pumpkin, grilled beef steak, oven baked eggplant topped with cheddar, roasted small peppers and fresh spinach to sneak the veggies in ????? It was so good.
The full meal is 434 calories with 36P, 33C and 17F. I love fats and usually don’t limit my healthy fats but if you don’t want to go crazy with them, change beef for chicken or turkey and you will be fine ? !!
