Nothing like a warm bowl of pasta to celebrate Friday ??? .

1/2 lb. Pasta (used @eatbanza
new Casarecce shape!)
1 T olive oil
4 cloves minced garlic
1 tsp onion powder (or sub minced fresh)
3 cups chopped tomatoes
1/2 can crushed tomatoes
1/2 cup vegetable broth
1/2 tsp dried oregano
1 tsp kosher salt
3/4 tsp pepper
Large handful organic baby spinach
Green olives for garnish
Fresh basil for garnish
Vegan parmesan for garnish (used @pimp.my.salad cashew parmesan)

Cook pasta, drain and rinse. Wipe out pasta pot and add oil and garlic. Cook for couple minutes, add tomatoes, broth and spices. Cook another 5 min, then add pasta and spinach, stir through. Cook another minute as spinach wilts. Add garnish as desired. .
