Chickpeas, cherry tomatoes, avocado, tricolor quinoa, roasted peppers over organic baby spinach…thrown together in about 5 minutes this morning amidst coffee making, kid breakfasts and random chaos. ??

People ask me how I prepare food as often as I do, since it seems like the meals take a long time. Although I sincerely wish I could be spending all day preparing food (in my dream life, I would be), my meals are almost always super fast to prepare. It’s not always easy to have food on hand, but some simple steps help out to make quick on-the-go lunches. ???

Having some type of greens in the fridge ✔ quinoa, rice, farro handy (which you can bulk prepare) ✔ tofu tempeh or other protein you can season to your fancy and bake on a sheet tray to last a few days ✔ beans or lentils (easy to bulk prepare) ✔ some fresh fruit and veggies that are simple to grab and rinse (like berries, tomatoes, corn, broccoli or cauliflower florets) rather than ones that take long to cut etc. ✔ have some pantry favorites like nuts, roasted peppers, olives, marinated artichokes or sun-dried tomatoes, etc. to throw in ????
