BBQ Chicken Burrito Bowls ūüí™
{ Basically all of my favorite things, in a perfectly portioned bowl! Great for #FoodPrep or a quick meal anytime! }
makes 2 servings/bowls
1 cup cooked brown rice
1 jalapenio, sliced
1/2 cup organic corn
1/2 cup black beans
a few leaves of crisp romaine lettuce

BBQ Chicken:
2 chicken breasts
1.5 Tbsps BBQ seasoning
1 fresh garlic clove, minced
1/2 tsp sea salt
1/4 tsp black pepper
1 Tbsp avocado oil, or olive oil

Pico De Gallo:
2-3 Roma tomatoes, diced
1/4 cup chopped fresh cilantro leaves
2 Tbsp fresh lime juice
1 small red onion, diced
1/2 tsp sea salt

In a medium bowl, add all BBQ chicken ingredients and toss to combine. Let marinate for about 15 min.
Meanwhile, cook rice according to package directions and prepare pico de gallo.
Preheat a skillet over med-hi heat. Once hot, add 1 Tbsp of oil and the chicken. Cook for about 8-10 min, flipping once halfway through.

Add all desired ingredients to each bowl equally, and enjoy!
Excellent for #FoodPrep too!
