Chocolate Chip Banana “Ice Cream” Cups ???
{ These lil’ “ice cream” cups are a fun, simple project to make with YOUR monkeys all Summer long! Allowing children to help with the creation of a snack or meal, usually increases their interest in eating it too! Have your picky eater help you to make healthy meals/snacks and one day…they just might come around…❤}
makes 6 large cups
Ingredients:
6 ripe bananas
1 tsp vanilla extract
1/4 cup chocolate chips, plus more to sprinkle. (I like lily’s brand sweetened with stevia Cleanfoodcrush.com/lilys)
Instructions:
Line a baking sheet with parchment paper. Slice the bananas and arrange them in one single layer on the prepared baking sheet. Freeze for about 2 hours.
Place the frozen bananas and vanilla extract in your food processor and blend until smooth and creamy. Remove blade.
Stir in chocolate chips.
Use a muffin silicone mold and scoop the banana “ice cream” into each cup, then sprinkle some chocolate chips over the top. Freeze for 1-2 hours.
Let the cups at room temp for a about 3 minutes before eating. Enjoy!
