Chop-Chop Chicken Salad
. {If you chop it, they will eat it! ?} .

makes 4 servings
Ingredients:
1.5 lbs. chicken breast
1 Tbsp avocado oil, or olive oil
1 tsp garlic powder
1/2 tsp dried oregano
sea salt, to your taste
2-3 large romaine lettuce hearts, chopped
1 avocado, diced
1 sweet red bell pepper, chopped
4 celery stalks, chopped
1 pint grape tomatoes, sliced in half
4 green onions, sliced .

Dressing Ingredients:
2 cloves fresh garlic, minced
1/2 tsp dried oregano
4 Tbsp fresh lime juice
1/2 tsp sea salt
1/4 tsp ground pepper – I really like white pepper in this dressing
2 Tbsps extra virgin olive oil .

Instructions:
In a small bowl, whisk all dressing ingredients. Set aside.
Heat a grill, or grill pan on medium high.
Lightly spray the grill with olive or coconut oil. Season the chicken breasts with the sea salt, garlic powder and oregano.
Once your grill/pan is hot, add the chicken and lower heat to medium. Cook for 4-5 minutes per side or until juices run clear and cooked through.
Remove chicken from heat, and cover, or wrap in foil while you prepare the salad ingredients.
Once chicken is cool, dice it into bite sized pieces.
Gently toss, and arrange all salad ingredients in a large bowl with your homemade dressing.
