Lemony Mediterranean Platter🍋

Marinade + Dressing:
2 Tbsps olive oil
juice from 1 fresh lemon
2 Tbsp dried parsley
2 Tbsp dried basil
2 Tbsp garlic, minced
1 tsp sea salt
cracked pepper, to taste (about 1 pound) 4 skinless, boneless chicken thigh fillets
4-5 cups Romaine (or mixed) lettuce leaves, washed and dried
1 large cucumber, diced
1 cup cherry tomatoes, halved
1 red onion, sliced
1 avocado, sliced
â…“ cup pitted Kalamata olives (or black olives), sliced
Lemon wedges, to serve
Whisk together all of the marinade/dressing ingredients in a medium bowl. Pour out half of the marinade into a jar with lid and refrigerate to use as the dressing later.
Add the chicken to the marinade in the bowl; marinade chicken for 15-30 minutes. While waiting for the chicken, prepare all of the salad ingredients nicely on a large plate/platter.
Once chicken is ready, heat 1 Tbsp of oil in a grill pan over medium-high heat.
Grill chicken on both sides until browned and completely cooked through.
Allow chicken to rest for 5 minutes; slice and arrange over salad. Drizzle salad with the remaining/untouched dressing. Serve with lemon wedges.
