{new} Chickpea + Broccolini + Kale Skillet 🌱
{ A quick green savory veggie side dish packed with FLAVOR & nutrients 🤜🤛 }
makes about 4 servings
Ingredients:
1 Tbsp olive oil, or avocado oil
4 cups kale, chopped
1/4 cup red onion, chopped
fresh chives
15 oz organic chickpeas, drained and rinsed if using canned
2 fresh cloves garlic, minced
1 bunch or 1/2 lb broccolini, trimmed
1 cup grape or cherry tomatoes, halved
sea salt and pepper to taste
Instructions:
Heat oil in a large skillet over medium heat. Add red onions and chickpeas. Saute for about 3 minutes, then add garlic and cook, stirring for about 2 more minutes. Add broccolini, tomatoes, and kale. Saute for 3 minutes stirring often until veggies are all crisp-tender. Season with sea salt, pepper, and fresh chives. Serve immediately.
