{New} Lettuce Wrapped Burritos

makes about 4 servings
Ingredients:
8 large Iceberg lettuce leaves (from 1 head)
1 lb. ground turkey meat
1 Tbsp avocado oil, or olive oil
2 bell peppers (red and green), diced
1/2 yellow onion, diced
2 fresh garlic cloves, minced
1/2 tsp paprika
1/2 tsp ground cumin
1 tsp oregano
1/2 tsp chili powder
sea salt and freshly ground black pepper, to your taste
15-oz. black beans, drained and rinsed
1 cup corn, I used organic frozen corn
1/3 cup shredded cheese, optional
a handful of fresh cilantro, chopped
lime wedges, to serve
Instructions:
Heat oil in a large skillet over medium high heat. Add onion, bell peppers and cook, about 3 minutes.
Stir in turkey meat, garlic and all seasonings. Cook, for about 6-7 minutes while stirring, or until cooked through.
Add black beans, corn, cheese and season with sea salt and pepper, to taste. Stir to combine.
Lay 2 lettuce leaves side by side, overlapping slightly. Place about 1/4 cupful turkey mixture in the leaves, then fold short sides of lettuce leaves in first, then roll into a cylinder, as shown — just like a burrito! Repeat with remaining leaves and taco mixture.
Cut in half and enjoy!
