{New} Roasted Rainbow Veggies 🌈

They can be served on a platter for a GORGEOUS Sunday Dinner side. Or the perfect lunch with some roasted chicken. 🥕🌱🍠 Ingredients:
1 small head purple cauliflower, chopped into florets
5-6 organic young carrots, chopped if large
2 small yellow squash, chopped into large half moons
1 bunch small, fresh crisp asparagus, trimmed
1 medium red onion, sliced
2 small sweet potatoes, chopped
2-3 Tbsps avocado oil, or olive oil
Instructions:
Toss all veggies in oil, sea salt, and pepper.
Coat everything well.
Roast on a flat, rimmed sheet pan at 400 degrees f. for about 15-20 minutes, depending on size of veggies.
