{new} Lemony Tzatziki with Spirlized Cucs + Grilled Chicken ????
aka: your new favorite Summertime meal!
These turned out good! Sooo refreshing! Was nice to try something different for the week.
REALLY best eaten same-day or definitely within 24 hours.
So if you’re looking for something to take for lunch tomorrow – this is it!
For 4 meal prep containers, I used:
20 oz grilled organic chicken breast, sliced
2 cups arugula
12 cherry or grape tomatoes, halved
2 fresh cucumbers, spiraled ( cleanfoodcrush.com/spiralizer)
1/3 cup red onion, sliced
1 Tbsps fresh dill, chopped
1 Tbsps freshly squeezed lemon juice
1 Tbsps extra virgin olive oil
1 tsp sea salt
4 Tablespoons homemade Tzatziki (recipe below)
Whisk together fresh dill, lemon juice, olive oil, and sea salt. Pour over spiraled cucumber and red onion. Toss until combined.
Arrange arugula and spiraled cucumber mixture equally in meal prep containers, top with grilled chicken, tomatoes, and tzatziki.
For the Tzatziki:
1 cup plain Greek yogurt
1/2 cup grated cucumber, squeeze out excess water really well
1 1/2 tsp fresh lemon juice
1 tsp fresh dill, chopped
2 fresh garlic cloves, minced
1/4 tsp sea salt
Place all dressing ingredients in a bowl, stir until well combined.
