{NEW} Slow Cooker ‘Roast’ Beef ❄?☃️ { SO much snow today in the SLC Valley! It’s incredibly beautiful! This is our first heavy snowfall of the season, so the kids have been outside most of the day playing in it. ?
Perfect day to just stay home, cook something delicious in a crockpot, and snuggle under a warm blanket. ?
This recipe is as simple as it gets, and rather fool-proof.
I seem to enjoy a roast MORE – the longer in cooks in my crockpot. ? }
makes about 6 servings
Ingredients:
2 – 2.5 lbs. beef roast
1 large yellow onion, roughly chopped
6 large carrots, peeled and roughly chopped
6 cloves fresh garlic, peeled
3 cups beef broth, or bone broth
1 Tbsp Worcestershire sauce
1/2 Tbsp smoked paprika
4 springs of fresh thyme
sea salt and freshly ground pepper, to taste
Instructions:
Add the onion, carrots, and garlic to your slow cooker. Pour in the broth and then add the beef. Sprinkle beef with sea salt and pepper then rub with Worcestershire sauce and paprika.
Add fresh thyme around the roast.
Cover and cook on low heat for 12-14 hours, until the meat is very tender. (I have cooked this up to 16 hours with good results!) Serve immediately, or store in the fridge for up to 4-5 days as food prep. ❤Rachel
