About those prawns from yesterday… I made this buddha bowl with boiled rice, 🥦, courgettes and some peas.
✨Fry 1 chopped shallot and 1 fat garlic clove in 1 tsp of oil for a minute, then add tomato paste, paprika, vegetable seasoning and a pinch of saffron. ✨Fry for around two minutes before adding ~ 200ml of vegetable broth, fresh oregano and a pinch of chilli powder. ✨Cook the sauce on high heat for around 3 minutes, once it starts boiling, turn the heat down to a simmer and cook for around 7 minutes then add 200g of prawns. ✨Once the prawns are pink, take the sauce off the heat then serve with rest of the elements in the bowl 😊
