Celebrating Mexican Monday because why not ? #whole30 style CILANTRO LIME CAULIFLOWER RICE bowl with BAKED PLANTAINS and TWO INGREDIENT MANGO CHIPOTLE SAUCE!!! This sauce is soooo good! Deets: greens, cabbage, avocado, tomatoes, cilantro lime cauliflower rice (2 tablespoons onion chopped sautéed in 1 teaspoon coconut oil, add 1 cup cauliflower rice and sauté for a few minutes. Add 1/2 teaspoon salt and some pepper and then toss with 1/3 cup cilantro chopped and 1/2 teaspoon lime zest and 1 teaspoon lime juice…double recipe for more), baked plantains (1 plantain cut into 1/3 inch slices tossed in olive oil and salt and baked on a rack over a cookie sheet for 10 minutes on 450 then flip and bake for another 10), soft boiled @vitalfarms eggs (tutorial in highlights), and SAUCE: 1/2 mango blended with a few tablespoons of @sietefoods chipotle sauce. •
