Crispy fish tostada with a side of eggplant! And pour me some more of that spicy mango tahini sauce, cuz that drizz is the shizzzz. I had no idea where this was going when I got home…I knew I wanted eggplant and I bought a piece of fresh cod…I also knew I needed a shower (many of you might not know that in addition to being a private cook and food blogger, I own and manage a dog walking company…so I spent a couple hours outside in the rain this morning with wet dogs…shower was necessary!) I threw the eggplant in the oven, and when I returned I decided what’s better than a tortilla? So I made this crispy fish over a cabbage-zucchini-pepper-arugula slaw, topped it with some @pickledplanet kraut, cilantro and this amazing tahini sauce! Hope you’re all having a lovely Thursday!



Deets: breaded the fish in egg white, @nunaturals oat fiber and ground up @jilzcrackerz! Baked it on 450 for about 15-20 mind (wasn’t keeping track!) The tahini sauce is @soomfoods, @heatandflavor mango hot sauce, lemon juice and coconut aminos.
