Face PLANTAIN-ING into the weekend so hard…you feel me? ? DAIRY-FREE LEMON MUSTARD CHICKEN SKEWERS and GARLIC MASHED PLANTAINS…so flipping delicious. Made this the other night for dinner and I guarantee it will be happening again real soon. These plantains were so tasty! I made them with garlic ghee from @fourthandheart to add some extra flavor! This meal takes like 30 minutes total (minus the marinade time) and it’s perfect. I usually put the chicken in marinade in the fridge earlier in the day. Happy Friday loves. It’s been a really emotional week for me and I’m ready for the weekend. Had a rough start today, but was able to turn it around with a mixture of self-care and a little Mental kick in the ? Deets: arugula tossed with olive oil, salt, tomatoes and lemon. Plantains: 2 ripe plantains boiled for about 4 minutes then mashed with 1 teaspoon minced garlic, 1/2 teaspoon salt, 1/4 teaspoon pepper, 4 teaspoons @fourthandheart garlic ghee. Chicken: 2 large chicken breast cut into 1 inch cubes and marinated (for a couple hours in the fridge) in a mixture of 1/2 cup almond milk yogurt, 1-2 tablespoons brown mustard, 1/2 teaspoon lemon zest, 1/2 teaspoon salt, 1/2 teaspoon onion powder, 1/4 teaspoon pepper, 1 tablespoon coconut aminos. Place on skewers (I ALWAYS SOAK my skewers ahead of time for a few hours so they don’t burn) and bake for 20-25 minutes on a cast iron or no stick pan (flipping halfway). I also grill these skewers but it was raining the other night so ?♀️
