Feeling some PEP(per) on this FRYDAY with this ROASTED RED PEPPER KETCHUP ? Seriously though, woke up feeling tired, but after a morning workout, some chocolate and a juice date with @bowlobsessed I gained some pep in my step ?? Working on some projects this afternoon and chomping on this plant bowl for lunch. These crispy chickpeas were DELICIOUS as well. Recipes below. What is everyone’s plan for the weekend? Deets: arugula, roasted fingerling potatoes seasoned with herbs (Roasted on 450 for about 25 minutes in my cast iron pan), avocado and crispy sautéed chick peas (peeled them then tossed in coconut oil and some @primalpalate Seasoning and sautéed for a few minutes until crispy!)
Roasted red pepper ketchup: 1 small jar roasted red peppers (7 ounces), 1 15 ounce can crushed tomatoes, 1 small onion, 1 clove garlic, 1/3 Cup coconut sugar, 1/4 Cup apple cider vinegar, 1/2 tablespoon black pepper, 1 teaspoon salt. Sauté chopped onion and garlic over medium heat in a tablespoon or less of oil until soft, add in the rest of ingredients and bring to a boil and mix well. Reduce heat for about ten minutes and allow to simmer. Blend ingredients until smooth. •
