?Fresh herb avocado dressing with Cuban style black beans, air-fryer sweet potatoes and tri-colored quinoa (oil-free, gluten-free). Simple delicious foods CAN be the spice of life?.
?Recipe: ?Fresh herb avocado dressing: Blend in high until smooth: 1 medium avocado, 3 tbsp tahini, 3 tbsp lemon juice, zest 1 lemon, 1 minced garlic clove, small handful fresh basil leaves, 1 tbsp parsley leaves, 1/4 cup water. Add salt + black pepper to taste.
?Recipe black beans: blend 1/2 cup cooked black beans + 1/2 cup cooking liquid (or can liquid/aquafaba) and blend until almost smooth. In saucepan cook 1/2 chopped onion and 2 minced garlic cloves in a little vegetable broth until fragrant and onion is translucent. Add 1 tsp ground cumin, 1/4-1/2 tsp cayenne powder, 1 tbsp dried oregano and cook another minute, adding more broth if becomes too dry. Add blended bean mixture along with 2 additional cups cooked black beans and 1 tbsp apple cider vinegar. Cook for about 10 minutes, adding more vegetable broth or water as needed. Add salt + black pepper to taste. ?For sweet potatoes: peel and cut into bite sized pieces. Coat with Braggs Sprinkles herbs and spices seasoning (or your choice of dried herbs and spices and olive oil if desired) and cook in air-fryer about 20 minutes at 400F. (You can also cook in oven on lined baking sheet but cover with aluminum foil for the first 10 minutes so they steam before cooking uncovered.)
