FRYday met TACO Tuesday today in my kitchen with some homemade “corn” (no corn added) almond-coconut paleo tortilla tacos (recipe below) and FRIED plantains (fried in coconut oil) ? I filled one with arugula, roasted portobello, tomato, soft boiled egg and micro greens…the other with arugula, avocado, mango, smoked salmon, roasted asparagus and some pea shoots. And of course a side of that ginger-cilantro avocado crema that I posted yesterday…wasn’t going to let that go to waste. I’m relaxing this afternoon after a crazy week and making dinner with a friend later. What is everyone up to this weekend? •


Tortillas: 3/4 Cup almond flour, 1/4 Cup coconut flour, 1/2 teaspoon xantham gum, 1/2 teaspoon cream of tartar, 1/2 teaspoon salt, 3 tablespoons warm water, one egg. Mix ingredients well and form small balls…roll them out into tortillas between parchment paper, create a circle cut out shape with a small bowl and cook on medium high heat for about 1 minute per side on a non stick griddle or greased cast iron. •
