Happy HUMP DAY! Sharing this COCONUT CURRIED COD and crispy potatoes I made the other night for dinner. It was soooo good. Marinating cod in coconut milk seriously is a game changer! I seared the fish, but this could be easily baked. How is everyone’s week going? It has been a busy one for me, lots of kitchen time along with lots of computer work…love being in the kitchen but don’t always love being in front of a computer ? just finally took a break and went for a walk ? Deets: 1 pound of cod fillets marinated in 1/2 cup of full fat coconut milk for about 20 minutes. Remove the cod and discard the milk. Rub both sides of the fish with a generous amount of curry powder then dear on medium high (sprayed with ghee and drizzled with coconut aminos) for about 2-3 mins per side depending on thickness. Broccolini roasted with salt and pepper and garlic. Potatoes: tossed in coconut oil, @traderjoes unagi seasoning and roasted for about 25-30 minutes on 400. Lemon wedges and a 1/2 baby avocado covered in hemp seeds and filled with olive oil and balsamic reduction. •
