HOMEMADE VEGAN MOZZARELLA is my new jam (recipe below) And these arugula and mozzarella quesadillas made my Monday just perfect! Happy Monday loves, hope you had a fantastic weekend. Soaking up my last day staying at my brothers while he’s away…and it’s been like a mini retreat. I have been able to go running in my favorite trails every morning and walk on the beach every night. I have even managed to do some recipe testing and work! Made this mozzarella last night, which turned into the most glorious lunch using @mikeys quesadillas. Dipped in a homemade no added sugar black pepper ketchup (recipe soon) with some avo and sugar snaps! Enjoy the day ❤️

Recipe: 3/4 cup cashews (soaked in boiling water for about an hour then drained), 1/4 cup homemade coconut milk yogurt (could try using store bought), 1/2 small lemon juiced, 1/3 cup unsweetened cashew milk, 2 cloves garlic steamed, 3.5 tablespoons of arrowroot (or tapioca) starch. Blend all ingredients until smooth. Heat mixture over low heat whisking it on the stove for about five minutes until it becomes a cheese ball. **i made this without nutritional yeast but you could add it if you wanted more of a cheesy flavor •
