How about some CURRIED CASHEW SHRIMP and vermicelli noodles? Super easy and super yummy for a Sunday night meal. Happy Sunday all. It’s been a hectic couple days but back from Baltimore and enjoying my weekend…relaxing and watching football. I am ready to get back at work tomorrow but for now I’m going to enjoy the rest of this lazy Sunday. How was your weekend?

Deets: Sauce: 3 tablespoons @bragglivefoodproducts coconut aminos, 2 tablespoons water, 1 tablespoon full fat coconut milk, 1 tablespoon tomato paste, 1 tablespoon sesame oil, 2 teaspoons curry powder…mixed together well. Make the noodles, and sauté the shrimp seasoned with some salt and pepper and set both aside. Then heat a skillet on medium high and add the cashews until they brown a bit. Then remove and toss with some sauce. Toss noodles with some sauce and brush the shrimp with some as well. Serve with some sautéed asparagus, sautéed red peppers, greens. •
