I needed something quick and easy for Sunday lunch so I made a spicy Chickpea stew with quinoa.

This is one of the simplest recipes ever. You just need:
1 can cooked chickpeas, drained & rinsed
1 large shallot, finely chopped
2 garlic cloves, finely minced
Handful cherry ?, halved
Large handful coriander, roughly chopped
2 tablespoons ?paste
1 vegetable stock cube
Chipotle pepper (optional)

1. Heat a splash of water (or oil) in a pan. Add the shallots and garlic, cook for a few minutes.

2. Add the tomato paste, cherry tomatoes, chipotle pepper, and vegetable stock, stir well then aadd around 200 ml of water.

3. Bring to the boil then turn the heat down to a simmer. Add the chickpeas and then cook with the lid on for around 7-10 minutes or until the sauce reduced by half.

4. Add the chopped coriander, stir then take the pan off the heat and serve with quinoa or whatever you fancy.
