I’ve had an extremely busy weekend, very long days of classes since Friday. I’ve been very sleep deprived so I needed to be away from the gram 😔 I don’t plan on taking extended breaks like before so fear not 🙂
Today I’m brining you something very different. It’s rice with melon seed stew. In Nigeria, we call it ‘Egusi stew’. This is my vegan version with kale and tofu.
