Meatless Monday—Ten Minute COPYCAT (Taco Bell) CRUNCH WRAPS! Filled with “CHEESY” SWEET POTATO AND SPINACH and a side of Sriracha aioli! Vegan and paleo! Happy Monday loves! To be honest, I’ve never had a crunch wrap from Taco Bell ? BUT If they taste half as good as these then I’m sold! Check my stories to see a step by step for these…literally took 10 minutes to make! Deets: 4 @sietefoods tortillas, make a cut out on two of them with a large mug to make them smaller. Place a few crushed tortilla chips on top of the larger one. (I used @sietefoods fuego). Make a mixture of 1/4 cup mashed sweet potato, 1/4 cup vegan queso (I used Trader Joe’s cashew fiesta dip) and 1/4 cup vegan cheddar cheese. Divide mixture amongst the two large tortillas. Sauté some chopped onion, garlic and spinach and top the cheesy mixture with the spinach. Place the small tortillas on top and fold (in pleats) the large one over the small one. Heat some coconut oil or ghee over medium high and place the folded side down, cook for 2 minutes then flip and cook for another 2 minutes. Dip: 1 tablespoon mayo (vegan if needed), 1 tablespoon of Greek style yogurt (regular or dairy free), 2 teaspoons sriracha, Squeeze of lime, a couple drops of sesame oil (omit if you don’t want a sesame taste). •
