QUESADILLA SUNDAY! I had a dream last night about quesadillas…so I decided to make my dream reality today. Made these vegan chickpea, kabocha, spinach and avocado quesadillas and they took no time at all! I will post instructions on blog I hope you are all enjoying your day, I’m off to a fundraiser in a bit for my aunt who is fighting cancer ❤️ We are all rallying to help her fight!

Deets: @sietefoods almond flour tortillas seared in coconut oil and stuffed with @traderjoes eggplant and red pepper spread, roasted kabocha squash, sautéed spinach, avocado and mashed chickpeas. Topped with this cilantro and avocado crema, pea shoots, @shanleyfarms Finger lines, roasted chickpeas scallions and @victoryhempfoods hemp seeds.
