SWEET POTATO TOAST upgraded 🙃Happy Tuesday loves!!! ONE more throwback to these sweet potato toasts and crispy asparagus egg nests as I’m at the airport on my way back to Boston. Check my highlights for a little preview of me making these babies. Also made this arugula parsley pesto (recipe below). Enjoyed a nice trip with my family in Florida, but back to reality today. Deets: roasted asparagus ribbons cooked into egg nests with dill, two slices sweet potato toasts with avocado, micro greens, hemp seeds and tahini and tomato arugula parsley pesto and micro greens. Pesto (one package arugula, 1/3 Cup parsley, 2 tablespoons lemon juice, 1/2 teaspoon salt, 1/4 Cup olive oil, 2 cloves garlic and a pinch of red pepper flakes.)
