Winner Winner AIR FRIED CRISPY CASHEW CRUSTED CHICKEN DINNER!! Plus a side of this SAVORY SWEET POTATO CAULIFLOWER MASH! #WHOLE30 approved! Happy Monday loves! Hope you’re all having an awesome start to the week. I’ve been in the kitchen alllll day today but getting stuff done! I made this chicken the other night, along with some boneless pork chops that I used the same recipe for. Both came out INCREDIBLE. So crispy on the outside and juicy on the inside. Also sharing this sweet potato and cauliflower mash I made last week…I loved the combination of the sweet potatoes and cauliflower, the texture was perfect. What did everyone do this weekend?



Deets:
1️⃣ Sweet potato cauliflower mash: 1 pound sweet potatoes peeled and chopped and 1/2 head of cauliflower cut up. Bring 6 cups water to boil with 1/2 tsp salt and simmer the potatoes and cauliflower covered until soft, about 20 minutes. Drain, Mash and/or use immersion blender depending on how creamy you want them. Add 1/2 tsp (or more) salt, 1/8 tsp pepper, 1 clove garlic minced, 1 tbls butter/ghee/coconut oil, 2 tbls Greek yogurt (dairy free or regular), 1/4 onion grated, 2 tsp coconut aminos, 1/4 tsp ground sage, 1/4 tsp chopped fresh rosemary and a few dashes of nutmeg.
2️⃣ Chicken: 1 pound @butcher_box chicken (patted dry), dipped in a whisked egg, then dipped in a mixture of 1/2 cup cashews (ground down in a blender), 2 tbls coconut flour, 1/4 tsp each of Salt, Paprika, Garlic powder, Onion powder, Chipotle Chili powder. Air fry on 370 for 9-10 minutes.
