Wishing I had this CHILAQUILES SKILLET SUNDAY in front of me right now. It’s been a while since I made some. Sometimes I use cut-up tortillas and crisp them up, but sometimes I do the lazy version with tortilla chips. Sharing recipe below, but posting a blog post later with both versions. This dish takes no time at all and it’s ? …. let’s face it, eating out of the skillet saves extra clean up! Anyone else love a good skillet meal? We hosted a big birthday party last night for my boyfriend’s daughter and I think everyone is feeling a little beat today. Off to do some work ❤️

Deets: Layer the bottom of cast iron skillet with @sietefoods tortilla chips, and pour some tomato sauce (Or salsa) over the chips (I used a brush to cover all the chips) then layer with more chips and more sauce. Add cheese if you would like as well! Bake for about 7-10 minutes on 400. Take out, top with greens, avocado, tomato, black beans, @vitalfarms fried eggs and regular or dairy free cream cheese….garnished with scallions and cilantro. •
