Would have loved to participate in Toast Tuesday today, but I’ve haven’t had the time to cook anything fresh today. This week is a crazy busy week for me as I have full days of lectures every day.

On my plate, orzo pasta with stewed kidney beans, spinach and cherry ?. Despite the fact that I’ve only been showing most of my vegan meals, my diet is a lot more varied. I hope to showcase that in my upcoming posts (most likely from next week).

Fun fact I learned today: sprouting of foods increases the bioavailability of nutrients in them, but it also predisposes you to microbial infection if done incorrectly. #nourishingfood #redkidneybeans #spinach
