Would have loved to participate in Toast Tuesday today, but I’ve haven’t had the time to cook anything fresh today. This week is a crazy busy week for me as I have full days of lectures every day.
On my plate, orzo pasta with stewed kidney beans, spinach and cherry 🍅. Despite the fact that I’ve only been showing most of my vegan meals, my diet is a lot more varied. I hope to showcase that in my upcoming posts (most likely from next week).
Fun fact I learned today: sprouting of foods increases the bioavailability of nutrients in them, but it also predisposes you to microbial infection if done incorrectly. #nourishingfood #redkidneybeans #spinach
