?Zoodle goddess Pad Thai bowl with a rockin’ peanut sauce! ?Happy #humpdaywednesday friends. This was dinner last night. The sauce was so yummy I could eat it with just about anything! Maybe even chocolate cake…seriously!!! What are your Wednesday plans? Mine are to do limited cooking?. Sometimes you just need a day off?. .

Sauce Recipe: whisk 1/4c peanut or cashew butter, 3 tbsp rice vinegar, 3 tbsp low-sodium tamari, 1 tbsp grated ginger, 1 tbsp garlic chili paste, 2 minced garlic cloves, 1 tbsp maple syrup, 1 tbsp toasted sesame oil. Then slowly whisk in 1/4c hot water. I sautéd some chopped scallions in some oil. Then added some minced garlic. After a minute when fragrant, I chopped asparagus and defrosted green peas. Once asparagus softened a bit, I tossed in the zoodles. After a couple minutes I added the sauce and juice 1 lime and gave it a good mix. .
