Celebrating FRYDAY with these savoury sweet potato wedges ✨ After an intense week I’m looking forward to the weekend to get some R&R, and get a bit ahead on work since I’m going on vacation in one week! 🙌🏼 I’m going to my hometown for THREE full weeks and I cannot wait- it’s been a while since I’ve taken a proper vacation and I’m so excited to see family, friends and make the most of those East coast summers 🌊 But I definitely have some work to get ahead on before any of that can happen 😅.

To make the wedges 👇🏼:
Slice potatoes (I used one massive one, but a couple small ones would work!) into wedges or fry shapes, then toss in a bowl with ~1 tsp olive oil, 1 tsp garlic powder, 1 tsp smoked paprika + a pinch of salt. Cook on a baking sheet at 450 degrees F for 25-30 minutes flipping half way through, until you can easily pierce with a fork. I served mine with this sriracha aoli, made by mixing vegan mayo, sriracha + a squeeze of lime (all to taste). Enjoy! 💛
