EASY VEGAN PHO ✨ It’s been raining the past few days here in Toronto, so I’m relying on this easy vegan pho to keep me cozy and warm 🌿 Although this is by no means traditional pho, it still has mimics traditional flavours and can be whipped up in less than 30 mins 🙌🏼 I love adding tons of veggies like mushrooms, bok choy and broccoli, plus tofu to bulk up this soup and make it even more filling✨.
To make 👇🏼:
Broil 1 onion (cut in half) and a 2 inch piece of ginger (cut in half) for about 5 minutes. Add to a pot with 4L of veggie stock, 1/4 tsp cloves, 1/2 tsp cinnamon, and 3/4 tsp coriander. Simmer on low heat for 20 minutes. After 20 minutes, take out onion and ginger. Add cubes tofu and any veggies of choice- I love bok choy, broccoli + mushrooms. Add in rice noodles and cook as per package instructions, plus 1 tbsp of soy sauce. Add toppings of your choice. I added sriracha, bean sprouts, hoisin tons of lime juice 💛
