GREEK PASTA SALAD ✨ Am I the only one that thinks summer and pasta salad are a match made in heaven? 😍 Filling, quick, delicious, nutritious and EASY, you’ll find me eating this exact recipe at least a few times a week in the summer. I love that it’s such a simple source of carbs, fat, protein, fibre and tons of micronutrients while being absolutely satisfying and delicious 🙌🏼 What’s your favourite type of pasta salad?! ✨.
To make 👇🏼:
Cook pasta (454g bag- you may have leftovers depending on how many you’re serving/your hunger!) as per package instructions. Meanwhile, dice 1/2 cucumber, 2 Roma tomatoes, 1/2 small red onion, and ~1/4 cup of kalamata olives. Drain and rinse a can of chickpeas. Once the pasta is done, add the veggies, 2 large handfuls of arugula, chickpeas, 2 tbsp of olive brine, 1 tsp oregano (to taste), the juice of 1 lemon + 1 tbsp olive oil and mix to combine. Enjoy! 💛
