Happy Friday my loves!
Coming at you guys with the recipe to these “Starbucks copycat” VEGAN roasted ? + pesto + mozzarella sandwiches. TAG A FRIEND in the comments below and grab the recipe to make these THIS WEEKEND ❣️? VEGAN PESTO + MOARRELLA SANWICH
Ingredients
@miyokos_kitchen fresh mozzarella
Vegan pesto (check site for the full recipe ) or use store bought
2 cups spinach
2 tomatoes, sliced + without seeds
Mini ciabattas or bread of choice
Salt + pepper

Method:
1.Preheat oven to 400 degrees F.
2.Slice and remove seeds from both tomatoes. Place tomatoes on a baking sheet lined with parchment paper and season with salt and pepper. Place in oven and bake for 15 minutes.
3.Meanwhile make “the best vegan pesto” from the blog (http://fuelednaturally.net )
4.Next in a medium sized pan sauté spinach with 1 tbsp of water, on medium heat until spinach is wilted down.  Should take 1 minute. Season with salt and upper.
5.Once you have all your components of your sandwich ready toast your bread and slice your mozzarella cheese.
6.Assemble your sandwich to your liking and enjoy! #vegan #starbucks #veganfood
