Bowls like this colourful falafel bowl are my favourite way to ensure I’m getting tons of veggies into my day 🌿 My biggest tip is to eat the rainbow! Try to incorporate as many colours of vegetables and fruit into your diet as possible to make sure you’re getting a variety of nutrients. For my other tips, check the link in my bio! 💛
Falafel recipe adapted from @minimalistbaker, sauce is a mix of 1/4 cup tahini, the juice of 1 lemon, 1/4 tsp garlic powder, 2 tsp maple syrup, and enough water to thin. With the falafels I added arugula, red pepper, red onion, cucumber and celery. Enjoy! ☀️
