Happy Monday! ? wishing I was having this delicious tofu scramble and roasted potatoes again this morning ?? to make the tofu scramble:

Sauté one chopped onion and 1 clove of garlic in coconut oil or oil/butter of choice. Add more veggies (I like red pepper and kale, but tomato would also be good!) once onion is translucent. Sauté for about 2 more minutes, then crumble a block of tofu into the pan and add 4 tbsp nutritional yeast, 1 tsp smoked paprika, 1 tsp turmeric, a dash of chili powder and salt and pepper to taste. Sauté for about 5-7 more minutes. Enjoy! ?
