MONDAY MEAL PREP ✨ To be honest, I’m not a huge fan of meal prepping entire meals, but I love preparing components. I usually prepare:
🌿 A source of protein: here I have BBQ tempeh, but I also love roasted chickpeas + baked garlic tofu.
🌿 Whole Grains: I love cooking a big pot of brown rice, quinoa or buckwheat to add to bowls, soups, stir fries or salads.
🌿 Roasted veggies: usually in the form of sweet potato, brussel sprouts, carrots or peppers.
🌿 Sauce: I make one of the three sauces from my free easy vegan sauces ebook (link in bio) to use for bowls, to top salads or for roasted veggies!
