I’m still a big fan of stir fries and I’m pretty sure I always will be 🙃. I made a very simple but tasty teriyaki veggie stir fry with whole wheat noodles for lunch.
To make this, ✨fry 150g of chopped mushrooms in 1 tsp of oil then set aside. ✨In a clean pan, fry 1 chopped spring onion (scallions) with one clove of garlic in a teaspoon of oil until slightly softened then add 100g broccolini and a handful of chopped savage cabbage to the pan. ✨Fry for 3 minutes, season with a splash of soy sauce then add a handful of cooked edamame and the mushrooms to the pan. ✨Stir fry for a further 30 seconds then add 2 tablespoons of teriyaki sauce. Cook for a further 1-2 minutes then serve over cooked noodles or rice if you prefer. Garnish with toasted sesame seeds and ENJOY 💙
