NOURISH BOWL ✨ Currently dreaming of this nourish bowl as I have absolutely NO food in my fridge- you can tell it’s been a crazy week when I’m literally out of ALL fresh produce since I usually love taking lunch break walks to my local produce stand 🌿 What’re you whipping up for dinner? I’ll live vicariously through you ✨.
To make 👇🏼:
Chop 1 large sweet potato and toss with 1 tsp of cinnamon. Then drain and rinse 1 can of chickpeas and toss with a tsp each of smoked paprika, garlic powder + onion powder. Place sweet potato and chickpeas on a sheet pan and roast at 450 F for 25 minutes. Meanwhile, massage some kale with lemon under it turns to a darker green and becomes softer. Once chickpeas + sweet potato are done, add to kale and top with a drizzle of tahini, lemon juice + maple syrup and enjoy! 💛
