Throwing it back to this epic bruschetta toast because the tomatoes in my parents garden are FINALLY ripening 😍 Nothing screams summer to me more than locally grown, sweet tomatoes 🙌🏼 What’s your favourite way to use fresh tomatoes?! ✨.
To make 👇🏼:
Combine 2 chopped tomatoes (or 2 large handfuls of halved cherry tomatoes) in a bowl with 6 chopped kalamata olives, 1 clove of minced garlic, 6 torn basil leaves, a drizzle of olive oil, a splash of balsamic vinegar and a pinch each of salt + pep. Let sit for a few minutes (if you have the willpower). I usually broil my bread until golden brown on each side, then add the bruschetta to the top and broil again until the tomatoes have deepened in colour 🍅
