Pumpkin Soup
Pumpkin Soup (P+V = Protien & Vegetable)
Ingredients:
- Butternut pumpkin chopped into chunks, skin removed
- 1 onion
- 1 teaspoon of garlic
- 1 teaspoon of curry powder
- 1 tablespoon of cream cheese
- 1 cup of chicken stock
Method:
- place 1 cup of chicken stock, garlic, curry powder, pumpkin and onion in a large saucepan
- Simmer uncovered until the pumpkin is soft
- Place all ingredients into a food processor and pulse till smooth (or you can mash/stir the ingredients in the pan)
- Serve with a spoon of cream cheese to mix in
Tip: This recipe freezes well so you can make a large batch.
