Pumpkin Soup

 Pumpkin Soup  (P+V = Protien & Vegetable)


  • Butternut pumpkin chopped into chunks, skin removed
  • 1 onion
  • 1 teaspoon of garlic
  • 1 teaspoon of curry powder
  • 1 tablespoon of cream cheese
  • 1 cup of chicken stock


  1. place 1 cup of chicken stock, garlic, curry powder, pumpkin and onion in a large saucepan
  2. Simmer uncovered until the pumpkin is soft
  3. Place all ingredients into a food processor and pulse till smooth (or you can mash/stir the ingredients in the pan)
  4. Serve with a spoon of cream cheese to mix in

Tip: This recipe freezes well so you can make a large batch.
