Grilled Sweet and Tangy Shrimp with Bacon Wrapped Asparagus⠀

I tossed the shrimp with a little avocado oil and generously coated with Fiesta Sweet and Tangy seasoning. I cooked the shrimp in a grill pan for 5-6 mins over medium heat.⠀

The bacon wrapped asparagus were cooked in the air fryer.
Grilled Sweet and Tangy Shrimp
Ingredients
⅓ cup chili garlic sauce
⅓ cup honey
1 pound medium shrimp, peeled and deveined
½ teaspoon salt
¼ teaspoon black pepper
Optional Ingredients
fresh chopped cilantro
lime wedges
Directions
Preheat the grill to medium-high heat.
In a large bowl, combine the chili garlic sauce, honey, salt, and pepper. Reserve about ¼ of the mixture to brush onto the shrimp after cooking. Add the shrimp to the remaining marinade and toss to coat evenly.
Place the shrimp on the hot grill. Skewers or a grill basket may also be used for ease of cooking.
Cook the shrimp for 2 to 3 minutes per side, until opaque and cooked through.
Remove the shrimp from the grill and brush with the reserved marinade (that has not touched raw shrimp). Garnish with fresh cilantro.
Serve immediately with lime wedges for squeezing over the top.
- Trim your asparagus. No one wants to eat that woody end, so you can cut the ends off, or do what I like to do, which is gently bend the asparagus and let it snap off where it sees fit. It won’t snap in the woody section, so this way you insure you aren’t getting tough asparagus.
- Cut the bacon in half lengthwise to make it thinner. This way you get bacon wrapped around the entire stalk without a ton of overlap, and without pieces of the asparagus exposed.
- Cook the bacon on a baking sheet, but put a rack, like a cooling rack, inside the baking sheet, and the bacon on top of that. This allows for better air flow, which will give you a more even cooking of the asparagus and the bacon.
- Flip half way through. Even though the rack on the baking sheet helps a lot with even cooking, I still find that by flipping the bacon wrapped asparagus half way through the cooking time gives me a crispier result.
