The Garlic Parmesan Potato Wedges are one of my favorite side dishes to include in my recipes. I’m often asked how you keep them crispy upon reheating in the microwave and the answer is you can’t. Part of meal prepping is accepting that you’re eating glorified leftovers and that you’re not going to maintain the same quality as you would eating the food fresh. If you used a toaster oven to reheat you may be able to bring back some crispiness but the potatoes are still quite delicious in their microwaved form. .⠀

Chimichurri is a South American sauce that is used primarily with grilled meats. The sauce is made from parsley, garlic, olive oil, vinegar, and spices. It is insanely flavorful and if you have never tried it, that is a mistake. I’ve yet to come across a grilled meat that isn’t made better dipped in chimichurri. Steak is my favorite to eat with chimichurri but chicken is a close second. It’s fatty, tangy, and verdant making it easy on the palate and the eyes. Not only is it good for meats but also for vegetables. When you take something that tastes bad (vegetables) with something that tastes good (chimichurri) it makes something that tastes somewhere in the middle of the flavor continuum. Simple math baby
