GREEK PASTA SALAD
Proof you can have your carbs and your salad, too!?A classic GREEK PASTA SALAD ?? is one of my favorites, its quick and healthy & feeds a crowd in no time. I made some tweaks to my go-to Lemony Vinaigrette and I think you’re going to love it! Grab the recipe deets below ????⠀

Go get 2-3 shallots and dice them as finely as you can. Add them to bottom of your dressing jar (dynamite) ?and then throw in:⠀

3-4 tablespoons of extra virgin olive oil⠀
2 tablespoons of fresh lemon juice⠀
2 tablespoons red wine vinegar⠀
2 crushed garlic cloves⠀
1 teaspoon of dijon mustard⠀
sea salt, oregano, fresh black pepper &⠀
sumac to taste. ??about 1/2 tsp each of sumac and oregano. Shake or whisk everything together, pour right before serving. Store in the fridge for 3-5 days.⠀

The pasta salad has chopped bell peppers, black kalamata olives, cucumbers, tomatoes and goat feta; which are the beginning of all good things!
