Student budget babes! Who’s ready for an easy, nourishing, plant-based and CHEAP recipe? I literally threw this recipe together in a pot and left it to cook while I got ready to go out for something to have on hand during the week and it came out so well. 10 minutes work for a week of reward!
❣️KALE & LENTIL STEW❣️
1 small brown onion, diced.
2 cloves garlic, minced.
1 bunch kale, chopped.
1 cup dried red lentils, rinsed.
1 vegetable stock cube.
1 tin tomatoes.
2 tbsp spices – I used a smoky American blend which was basically smoked paprika, garlic & onion powder, cumin and a little brown sugar & nutmeg.
1 tbsp olive oil.
Heat the oil in a saucepan. Add the onion and sweat down.
Add the garlic, cook for a few minutes more and add the spices. Stir to coat.
Add the stock cube, lentils, about 2 cups of water and tomatoes to the pan. Cover and leave to simmer for about 15-20 minutes.
Stir well, add more liquid if necessary and add the kale. Cook for a further 5-10 minutes.
I served mine topped with @pimp.my.salad vegan cashew parmesan for flavour and some extra healthy fats. Plant-based protein, fibre and micronutrients for super minimal money or effort ❤️❤️❤️
