Sweet potato, Brussels, and Egg skillet 😍 Made an easy egg skillet for lunch today 👌🏻 Crispy sweet potatoes + Brussels paired with a sad, broken egg 😂 The yolk broke but it still turned out tasty 😋 I cooked the sweet potatoes and Brussels before I added the egg in and they got sooo crispy 🙌🏻 I used @aldiusa avocado oil (avo oil has a higher smoke point than other oils so it doesn’t break down if you heat it up) and it hardly stuck at all! This was my first skillet meal (surprising because I love my cast iron so much 🤷🏼‍♀️) and I was really worried about it sticking and becoming a total mess 😬 Luckily- worked out super well (minus the broken egg!) Going to be making different variations of this all the time because it was such a good switch up on the usual egg meal 😎 We’re heading to a med school Halloween party tonight so I’m finishing up our costumes this evening! I made Tippy one even though she’s obviously not going 😂 For any Riverdale fans- we’re going as Betty and Jughead and I made tippy a black hood haha. I’m not a fan of Halloween but sometimes it’s fun to dress up! Happy Friday friends ❤️ ————————————————————————————— recipe details 👉🏻 heat some avo oil in a skillet over medium heat. Add in Brussels and sweet potato. I used about 5-6 Brussels and 1/2 sweet potato. Cook until soft- it was about 10 mins. I preheated the oven to 400F. After 10 mins I added the egg into the skillet then put the pan in the oven for another 10! Just keep an eye on your egg and make sure the whites are done. Topped with avocado because can you have egg and sweet potato without it?! 😎
