SAVE THIS CROWD-PLEASING RECIPE!

This little ripper from @sanremopasta is super easy, looks impressive and is delicious. Pasta done right is filling, gives us fibre and is a great source of Carbs – the easiest macronutrient for our body to use as energy.

Here’s how this salad is done:
• 500g San Remo No. 23 Bowties
• 1 red onion, finely diced
• 1 red capsicum, finely diced
• 1 punnet assorted baby tomatoes, halved
• 1 cup pomegranate seeds
• 1/3 cup pine nuts, toasted
• 1/2 cup mint, torn
• 1/2 cup basil, torn

Pesto
• 2 garlic cloves
• ½ tsp sea salt
• 30g pine nuts
• 90g basil leaves
• 45g grated parmesan
• ¾ cup olive oil

Method
1. In a pot of boiling salted water, cook pasta as per packet directions. Once cooked, place pasta in a large mixing bowl.
2. To make the pesto, grind garlic with sea salt with a mortar and pestle (or food processor). Add pine nuts and grind to a paste.
3. Add basil leaves in batches and grind (or blend) to a paste. Mix through the parmesan. Gradually add olive oil, stirring to emulsify.
4. Pour pesto over cooked pasta and mix gently.
5. Add remaining ingredients, retaining a third of the pomegranate seeds, mix gently.
6. Serve on a large platter garnished with remaining pomegranate seeds.
7. Serve and enjoy with family and friends!
